Valentine Cupcakes Gone .... Spring in 20 days!

February 14th was the last day to bake before I hit the road.  School vacation started February 15th here in Massachusetts.    We visited a few colleges.....again....University of Maryland and Virginia Tech,  and bagged Clemson at the last minute because of storm Q.   My 16 year old daughter, Maddie, was questioning my motive.....again?  Yes, again!  Now enjoy the ride and eat a cupcake.  It will be your turn soon.

I've read The Cake Doctor,  The Cake Doctor Returns, The Cupcake Diaries, Cake, Baking: From My Home to Yours,  The Cake Bible  and many other  "how-to" books on baking. I have no formal training, just a life long love of cooking and now, baking.  Revelation... I've come to the conclusion that I like to bake from scratch. I like to feel dough.  I like to see the butter and eggs puff in the mixer.  I like the smell of real chocolate baking.  As Ina Garten says,  "you can almost smell when a chocolate cake is done.  It smells like chocolate cake!".    Baking from scratch requires knowing your oven and editing your recipe accordingly.  But for those of you who don't care if you are using a bake mix or not,  there are some really good "cheater" (hate using this word) recipes out there.  Really good!
